Connoisseurs' Guide to California Wines
73% Cabernet Sauvignon; 20% Merlot; 5% Cabernet Franc; 2% Petit Verdot. We like this wine's initial impressions of sweet oak and curranty fruit, and we like its subtle highlights of briar and dusty earth, but we are less taken by its inherent stiffness. In the end, it is a little too nervy and not sufficiently fleshed out to claim full recommendation as a wine that will be substantially bettered by keeping.

Rated: 89 by Stephen Tanzer, May/Jun 10

Good ruby-red. Musky aromas of plum syrup, earth, tobacco, herbs and chocolatey oak; suggests less even ripening than the 2007. Then reasonably rich but a bit dry in the mouth, and less harmonious than the '07. A medicinal menthol quality gives this wine a slightly disjointed feel.

SECRETO MALBEC RESERVA
BY VIU MANENT

VITICULTURE
Vineyard: El Olivar, located near the town of Peralillo in the Colchagua Valley. The plantation
averages 12 years old.
Soils: Shallow hillsides with moderate fertility.
Climate: Total precipitation was 480 mm (19 in), concentrated during the winter months. The
summer was dry with a complete absence of rain until May 5. The 2010 season was colder
than normal in Chile, especially in the Colchagua Valley. Overall, the wines are fresher, with
higher natural acidity and less alcohol.
Vineyard Management: The vines are planted to a density of 2,900 plants/hectare in low
vertical shoot position and spur pruned. Excess buds and shoots are removed in spring and
early summer, and leaves are hand pulled in early March to increase solar exposure to the
grapes.
WINEMAKING
Variety: Malbec 85% and 15% “secret”
Harvest: The grapes were hand picked between April 29 and May 5, 2010
Vinification Techniques: The grapes were manually selected, destemmed, and crushed into
stainless steel tanks, where they underwent a 5-day pre-fermentation cold soak at 8°C (46°F)
for greater extraction of color and aromas. Alcoholic fermentation took place with native
yeasts at 26°–28°C (79–82°F). The 2 daily pumpovers were kept short to extract only the
most elegant tannins and obtain a fruitier, friendlier wine. Malolactic fermentation took place
naturally in oak barrels.
Oak: 75% of the wine was aged for 6 months in French (97%) and American (3%) oak
barrels. The remaining 25% was aged in stainless steel tanks to preserve the fresh fruit
characteristics in the final blend.
LABORATORY ANALYSIS
Alcohol: 14.1% vol.
pH: 3.52
Total Acidity: 5.41 g/L
Residual Sugar: 2.5 g/L
Volatile Acidity: 0.42 g/L
TASTING NOTES
Dark purplish-red with aromas of berries on the nose along with floral notes of violets that
intermingle with a subtle touch of toasted mocha. Fresh and fruity, fat and friendly on the
medium-bodied palate with notes of blueberries and sweet, velvety tannins that lead way to
an elegant, mineral, and well-balanced finish.
AGING POTENTIAL Drink now or age up to 8 years.

Craft Beer... In A Can?
As the weather increasingly becomes more tolerable we find ourselves venturing outside to spend quality time in the sun. And like mother always said, it is important to apply sunscreen and stay hydrated. A cooler or backpack full of refreshments is a beautiful thing. But glass bottles can be heavy and cumbersome. No one wants to hike with the extra weight or risk broken glass on a boat. So what is one to do, nothing of quality could possibly be packaged in aluminum... right?

The answer to this question is yes, it certainly CAN! (Haha, see what I did there?)

Craft beer in a can, some consider this blasphemous... But there is a revolution taking place on the production lines of top craft breweries. The selection of canned beer has grown over the past 5 years to include a myriad of styles to suit any taste preference. Breweries like Cisco, Magic Hat, Oskar Blues, and New England are packaging their top sellers in cans, making them environmentally and travel friendly. A common misconception surrounding canned beer is that it tastes like metal. This can not be further from the truth. The inside of cans are sprayed with a protective coating so beer never touches aluminum. And unlike bottles, cans protect beer from premature spoilage due to light exposure and oxidation. Cans also become cold faster and stay cold longer.

Consider the aluminum can your new best friend, a faithful companion that will travel with you wherever you go. Grab a six pack, slap on some sunscreen and embark on an epic adventure!

A few of our my favorites include:
Magic Hat #9: A great summer brew, perfect for the beach! Light, crisp and refreshing. It tastes like a Pale Ale but drinks like a Hefeweizen.

Butternut’s Pork Slap: This Pale Ale really hits the spot. It is crisp and refreshing with a medium-body. It has a soft touch of citrus on the finish. It is brewed with a hint of ginger to give it a distinctive kick.

Oskar Blues Old Chub: This traditional Scottish Ale is silky smooth bursting with flavors of coffee, cocoa and a touch of smoke. Brewed with a considerable amount of malted barely, this dark ale is a crowd pleaser.

New England’s Sea Hag IPA: This rich, full-bodied IPA packs a ton of flavor into a 12oz. can. Sea Hag is an awesome IPA with a great hop character.
